MUSCAT DE NOEL

The Muscat de Noël is a special cuvee for the new Muscat de Rivesaltes. It has the particularity of offering all the freshness and aromas of the just-picked, crisp and fresh grape. Elegant and charming, with pearly reflections, it announces the beginnings of the holidays. Very good as an aperitif, it also pairs well with foie gras, white meat or fish. The Muscat de Noel is also a perfect match for several cheeses among which Roquefort, fresh goat, sheep, and Parmesan cheese. It also magnifies exotic fruit sorbets, honey desserts, meringue lemon tarts, Christmas and King cake. In the 14th century, the first Muscat of the year was traditionally served at the table of the Royal Court of Barcelona, during the celebrations of the Nativity. Later forgotten, some passionate winegrowers proud of their first Muscat, decided in 1997 to revive the tradition by making it known to the greatest number.  Muscat de Noël is obtained by a rigorous process which consists of adding 96% vinified neutral alcohol to the fermentation must in a proportion of 5 to 10% of the total volume. This operation, called “mutage”, makes it possible to suspend the action of the yeasts before they have been able to convert all the sugar into alcohol.

圣诞麝香甜白

圣诞麝香甜白,特指里韦萨特产区的麝香天然甜型葡萄酒,它预示着这个A.O.P.葡萄酒新年份即将到来。每年,圣诞麝香甜白都点缀着圣诞节的餐桌。官方决定在每年11月的第三个星期四发售这款新酒。而今年的新酒即将在11月17日开始可以尝到。
圣诞麝香甜白,古老传统与分享
在14世纪,在圣诞节期间,每年的第一批麝香葡萄酒都将进贡给巴塞罗那宫廷为皇室所享用。随着时代迁移,后来只有酒农和他们的家人继续着这个品鉴传统。在1997年,一些热心的酒农决定将他们引以为傲的麝香葡萄新酒复兴,并让更多的人知道。这就是圣诞麝香甜白这个名字的诞生。
圣诞麝香甜白,独特的酿造工艺: 圣诞麝香甜白是通过一个严谨的工艺酿造所得的,在葡萄汁发酵期间加入浓度达96%的中性酿酒酒精,比例为葡萄汁体积的5%-10%。这一过程称作中断发酵,使得酒精发酵中断,阻止葡萄中的所有糖分都转换为酒精。
圣诞麝香甜白,法律保护: 自1997年起,提及圣诞麝香甜白就相当于里韦萨特麝香天然甜型葡萄酒。
它的生产和消费条件被写入了AOP新酒保护法规并明确规定:
在12月1日前完成在酒庄内的灌装,
新酒的销售在11月第三个星期四开始,
通过瓶饮消费,
要在酒标上标明年份以及标明是“圣诞麝香甜白”。
